Mediterranean Lemon Chicken Dip: A tangy and creamy dip perfect for your Super Bowl Party!
It’s Super Bowl Weekend and we’re craving dips, chips and snacks like never before! Below are a few of my favorite party foods plus a new recipe added to the mix: tangy Mediterranean Lemon Chicken Dip topped with crushed potato chips, bacon and of course: feta crumbles.

I’ve found the simplest of recipes are often the most delicious. This is especially true with Mediterranean recipes and proven here with this Savory Feta Cheese appetizer.
The filling in these hand pies is flavorful and tastes of fall. Fresh Fuyu persimmons are slowly simmered in Metaxa (Greek brandy) with freshly grated ginger, orange zest and cinnamon. YUM.
According to Wikipedia, the generic name for the Fuyu persimmon tree is Diospyros, which comes from the ancient Greek words dios (διός) and pyros (πυρος). The translation from Greek to English means more or less “divine fruit” or “divine food.” Being a lover of the Fuyu Persimmon, this translation is pretty spot on.
I’ve found a new cheese to love this summer: Burrata – a fresh Italian cheese consisting of mozzarella cheese soaked in heavy cream. It is slightly sweet and milky. Of course this cheese will be delicious on pizza, or in a fresh garden salad, but because of Burrata’s mildly sweet flavor, I decided to substitute this Italian favorite for my usual go-to thick Greek yogurt on top of a fresh fruit salad.

I really love it when I can create healthier versions of my favorite sweets. These Fig and Walnut Oatmeal Squares are made with whole wheat flour, sweetened with brown sugar and dried figs and spiced with cinnamon and cloves. Adding walnuts to this bar adds fiber, protein and heart-healthy Omega-3 fatty acids. I think you’ll find they are a tasty and satisfying healthy snack!

Dating back to the 1920’s, the S’more is a popular campfire tradition consisting of a toasted marshmallow and rich melty chocolate sandwiched between two crunchy graham crackers. Today we celebrate National S’mores Day in America, so here’s my version of the S’more, simplified and Greekified!
A few weeks ago my husband and I hosted a dinner-pool party for a handful of families. Preparing meze, pitas, souvlaki and sweets for days before, I was pleasantly surprised when one guest walked in with a very Mediterranean looking appetizer: what I’m calling the 3-Ingredient Mediterranean Dip.
