Chai Spiced Banana Muffins | figsandfeta.comI love to find ways to incorporate Greek yogurt as an ingredient in my baking and cooking. Combine it with mashed avocados to make a tangy and delicious Greek Guacamole dip, use it as a marinade for Greek Chicken Souvlaki, or whip it with feta for a perfect smashed or baked potato topping.

For an extra special treat (and my favorite choice) top these muffins with a bourbon glaze.

  1. 6 ripe bananas
  2. 2/3 cups Greek yogurt
  3. 10 tablespoons butter, melted and at room temperature
  4. 4 eggs
  5. 1 cup white sugar
  6. 1 cup light brown sugar
  7. 4 1/2 cups all purpose flour
  8. 1 1/2 teaspoons baking soda
  9. 1 teaspoon salt
  10. 1 1/2 teaspoons ground cardamom
  11. 1 teaspoon ground cinnamon
  12. 1/2 teaspoon ground ginger
  13. 1/2 teaspoon ground allspice
  14. 2 teaspoons vanilla extract
For the Sugary Glaze
  1. 1 cup confectioners sugar
  2. 5 teaspoons low-fat milk
  3. 1/2 teaspoon vanilla extract
  4. 1/2 teaspoon allspice
  5. OR
For the Bourbon-Sugary Glaze
  1. 1 cup confectioners sugar
  2. 2 teaspoons low-fat milk
  3. 3 teaspoons bourbon (I use Bulleit brand)
  4. 1/2 teaspoon vanilla extract
  5. 1/2 teaspoon allspice
  1. Preheat oven to 350 degrees.
  2. In the bowl of a stand mixer fitted with the paddle attachment, combine bananas, Greek yogurt, melted butter and eggs. Mix until just combined, about 2 minutes.
  3. Add white and brown sugars and mix until just combined, about 1 minute.
  4. In a separate bowl, combine four, baking soda and salt. Slowly add flour mixture to wet mixture and mix until just combined, careful not to over mix.
  5. In a small bowl, combine cardamom, cinnamon, ginger and allspice. Carefully add to the muffin mixture along with 2 tablespoons vanilla extract and mix until just combined.
  6. Scoop into muffin pans lined with muffin cups. Bake at 350 degrees for 20 minutes until the tops of the muffins spring back when touched.
  7. Allow to cool completely on wire rack.
  8. Drizzle with Sugary Glaze or Bourbon Sugary Glaze (optional).
  1. This recipe can also be baked in two 9x5 inch loaf pans.
