Filo Cups with Limoncello Fruit Salad and Lemon Greek Yogurt


Fruit tossed in limoncello liqueur, topped with lemon flavored Greek yogurt and served in an edible sugared filo cup?! Now you can have your fruit and eat the bowl too. ;)

Inspired by an Ina Garten recipe, these little fruit cups are refreshing and fun. Simple and quick to prepare yet elegant and festive, this flavorful and colorful dessert could instead be served in the form of a dessert bar. Simply set out the filo cups, Limoncello Fruit Salad and Lemon Greek Yogurt in a line and invite your guests to build their own!



Homemade Filo Cups: (makes 12):

5 Sheets of Filo

1 stick butter, melted

2 tablespoons sugar

1/2 teaspoon cinnamon

non-stick cooking spray

Greek Lemon Yogurt:

1 cup Greek yogurt

1/3 cup lemon curd

1 tabelspoon honey

¼ teaspoon vanilla extract

Limoncello Fruit Salad:

1 pint strawberries, sliced

½ pint raspberries

½ pint blueberries

2 tabelspoons sugar

3 tabelspoons limoncello liqueur

1 banana, sliced

Fresh mint sprigs

Step 1: Prepare the Filo Cups: Preheat oven to 375. Combine sugar and cinnamon in small bowl. Lightly spray muffin pan with cooking spray and set aside. On a large surface lay one sheet of filo and brush with melted butter.  Sprinkle lightly with sugar-cinnamon mixture.  Lay another filo sheet on top and repeat with butter and sugar-cinnamon mixture.  Continue until 5 sheets are stacked on top of one another.  Cut into small squares and press into the muffin cups.  Bake at 375 for 8-10 minutes.

Filo-Cups-1 Filo-Cups-2Step 2: Prepare the Lemon Yogurt: In a medium bowl, whisk together the yogurt, lemon curd, honey and vanilla and set aside.

Step 3: Prepare the Limoncello Fruit Salad: Toss together the strawberries, raspberries, blueberries, sugar and limoncello liqueur.  Set aside and allow to sit for 5 minutes. Just before serving gently fold in the sliced banana.

Fruit-Cups-4Step 4: Impress your guests:  Center an empty filo cup on a dessert plate.  Place a scoopful of the Limoncello Fruit Salad into the filo cup. Top with a dollop of the Greek Lemon Yogurt and a sprig of fresh mint. Serve and enjoy!
