Grilled Summer Vegetable Orzo Salad with Fig Balsamic Vinegar

Orzo-Salad-8Continuing my obsession with the recently discovered bottle of Fig Balsamic Vinegar produced by O Olive Oil, I happily introduce: My New Favorite Summer Orzo Salad, also known as Grilled Summer Vegetable Orzo Salad with Fig Balsamic Vinegar.

Orzo-Salad-7My brother prepares the tastiest grilled vegetables. After grilling a garden variety he drizzles the vegetables with balsamic vinegar while they are still warm and tosses to coat. The sweet smell is inviting and when you taste them you realize that it is indeed possible to bring grilled vegetables to a whole new level.

Orzo-Salad-9Inspired by my brother’s technique, the Fig Balsamic Vinegar adds extra sweetness to the already yummy grilled vegetables. Adding Orzo, feta, Kalamata olives, marinated artichokes and a handful of other scrumptious ingredients makes this a simple and tasty Mediterranean dish.

RECIPE:

2 cups cooked orzo

Grilled seasonal vegetables- I used 1 zucchini, 1 yellow squash and 1 red onion.

½ cup marinated artichokes

¼ cup sundried tomatoes, chopped or julienned

¼ cup Kalamata olives, halved or quartered

½ cup Feta crumbled

1-2 tablespoons fresh rosemary, chopped fine

1-2 tablespoons fresh basil, chopped fine

¼ cup Fig Balsamic Vinegar, plus some for drizzling

¼ cup Olive oil

Salt and Pepper to taste

Wooden skewers

DIRECTIONS:

Cut the vegetables into large chunks, brush with olive oil and skewer. Grill until browned, rotating so all sides cook and brown. Remove from grill and remove the vegetables from the skewers. Place on cutting board and give them all a rough chop. Place in a large bowl and while the vegetables are still warm dress with ¼ cup Fig Balsamic Vinegar.

Add in all of the remaining ingredients to the vegetables. Toss to coat and serve warm, room temperature or cold.

Drizzle with a little more Fig Balsamic Vinegar. Serve alongside Fig Balsamic Marinated Skirt Steak or Gyro Burgers.
