My Version of Kopanisti:Tangy Feta Spread

Kopinisti- Tangy Feta Spread|figsandfeta.comSo, there’s this really great traditional Greek dip called Kopanisti: a tangy feta spread made with feta cheese, garlic and roasted red peppers. It’s a great dip, fast and easy to make in the bowl of a food processor.

Kopinisti- Tangy Feta Spread | figsandfeta.comI’m creating a different version of this tasty and tart dip, substituting red peppers with Greek Pepperoncini and adding lemon juice. Red pepper flakes help to give this spread a little kick.

Kopinisti- Tangy Feta Spread | figsandfeta.comServe with crackers, pita wedges or sliced cucumbers. Better yet…lather it on grilled corn-on-the-cob, top with bacon, fresh herbs and grated Mizithra cheese. So. Good.

A tangy and delicious spread for crackers, veggies or grilled corn.

  1. 1 cup crumbled Feta cheese
  2. ½ cup Greek Pepperoncini, stems and seeds removed
  3. 10 fresh mint leaves
  4. 1-2 garlic cloves
  5. ¼ teaspoon red pepper flakes
  6. 2-3 tablespoons olive oil
  7. Juice of 1 lemon
  1. Place all ingredients in the bowl of a food processor with the blade attachment and process until smooth.
  1. Serve this tangy dip with crackers, pita wedges or sliced cucumbers, or lather it on grilled corn-on-the-cob, top with bacon, fresh herbs and grated Mizethra cheese.
