There are blogs and websites dedicated to bacon. Bacon is an incredible ingredient, magical if you will. Can it be put on anything to kick up the flavor factor? Probably.
It seems crucial to begin my blog with a recipe that involves either “fig” or “feta.” I can’t very well title my blog “Figs & Feta” and begin with a recipe titled “Pasta ala Greece!”… however, that will come later… along with Baklava, Pastichio and other Greek standards. I hope this little recipe will whet the appetite and offer a little teaser into the world of Figs & Feta.
I love the combination of sweet and salty. Here, figs (sweet) and feta (salty) join hands to create a simple, warm and chewy appetizer. To take it all to another level I’ve added a drizzle of honey and a chunk of crispy bacon. Sweet, salty, sweet (again) and a new friend: crunchy. This is an easy and fast way to whip up an appetizer or late night snack, incorporating some standard Greek flavors with one very popular American one: bacon!
12-18 dried figs; stems cut off
12-18 small cubes of feta
honey for drizzling
1-2 strips of bacon, cut into small pieces and fried until crisp
Set the broiler on high. Prepare the bacon and fry the pieces in a small pan until crisp. Open the figs slightly creating a little bowl for the feta cube. Place the feta cube inside the fig and place the stuffed figs on a small broiler-safe pan. Broil the figs for about 6-8 minutes, until the feta becomes slightly soft and the figs begin to caramelize. Remove your bacon and drain off excess fat by placing the pieces on a paper towel. Place your broiled figs onto your serving platter and drizzle with honey. Place a piece of bacon on the top of each fig and sprinkle the remaining bacon around the plate.
