I’m loving this rosemary simple sugar. Marrying it with pomegranate and Prosecco makes for a festive and flavorful cocktail. Combining it all in a pitcher means you get to mingle with your guests at your next party rather than getting stuck behind the bar. :)
1 cup pomegranate juice, such as Pom Wonderful
¼ cup rosemary simple sugar (recipe below)
1 bottle Prosecco
Pom seeds and rosemary springs for garnish
Prepare the rosemary simple sugar: In a small sauce pan, combine 1 cup white sugar and 1 cup water. Bring to a boil and let simmer for 5-8 minutes until the mixture thickens. Remove the pan from heat and drop in 2-3 fresh rosemary sprigs. Allow to sit until the syrup is cooled. Remove the sprigs and store the syrup in a jar or airtight container in the refrigerator.
Combine pomegranate juice, rosemary simple syrup, Prosecco and ice in a large pitcher. Stir gently to combine. Place pomegranate seeds and a sprig of fresh rosemary in each champagne flute. Fill the flutes with the cocktail and enjoy!
