This tasty sauce is simple and easy to make. The simple secret to a good Tzatziki is the Greek yogurt. Make sure it’s thick. If it’s not thick and seems too watery, strain the yogurt for a few hours before mixing in the remaining ingredients.
2 cups thick Greek yogurt
1 English cucumber, unpeeled, seeds removed
2-3 cloves garlic, pressed
1 teaspoon dried dill
Splash of lemon juice
Salt and pepper to taste
If the yogurt needs straining, place it in a cheesecloth or paper-towel lined sieve and set over a bowl. Grate the cucumber and place in a sieve. Set the cucumber aside and allow to drain.
Squeeze any excess water out of the cucumber. Combine the thick yogurt, cucumber, garlic, dill and lemon juice, salt and pepper in a medium bowl. Stir to combine and refrigerate, overnight if possible.
