Fanouropita

St. Phanurius Cake

Fanouropita Cake | figsandfeta.comIn the Orthodox Church, August 27 is dedicated to Saint Phanurius. The Orthodox faithful pray to this Saint to help them recover lost things such as car keys or a child’s favorite toy. Some even pray to this saint to  help them find hope, faith or focus. As a thanks-offering the custom arose of baking a cake in his honor. This is my favorite recipe for a Fanouropita Cake, updated by making them into little bundt cakes and topping them with fresh local berries and organic crystallized ginger.

 Simply Prepared in One Bowl!

“Oh.. it’s a cake!”

Cake Please. Hold the Butter.

Olive-Oil-Cake-25There’s been some talk lately about Olive Oil Cake; it being “better for you” because the ingredients call for oil over butter. I was curious: Does the lack of butter turn out a cake also lacking taste? I’m a cake fan and if I am going to eat cake, I want to feel like I’m eating CAKE. Today my curiosity and question is answered.

Non-Dairy Greek Spice Cake Donuts

Donuts-3Recently purchasing a much-needed, little non-stick donut-baking pan, I figured it would be fun to “greek-ify” a baked donut.  This pan is turning out to be the best $4.95 I’ve spent in a long time. I find myself wishing I had purchased two instead of one!
